What You Need to Make Keto Cauliflower Bites
Cauliflower florets – The main ingredient; tender on the inside and the perfect low-carb base.
Almond flour – Acts as the first layer of coating, helping other ingredients stick and adding a nutty flavor.
Beaten eggs – Bind the coating to the cauliflower and bring in flavor from herbs and spices.
Thyme, basil, garlic powder – Add depth and seasoning to the egg wash for herb-infused flavor.
Crushed pork rind crumbs – Provide crunch and act as a keto-friendly breading substitute.
Grated Parmesan cheese – Adds a salty, cheesy layer to the coating that crisps up when cooked.
Olive oil and/or coconut oil – Used for frying to make the bites golden and crispy.
Salt and pepper – Enhance the flavor of all the other ingredients and round out the seasoning.

How to Make Keto Cauliflower Bites
Step 1:
If you plan to fry your cauliflower bites, place a high sided pot or skillet on the stove over medium-high heat, and begin to heat up some olive oil and/or coconut oil (we used a mixture of the two). If you are alternatively using the oven to bake your bites, or an air fryer, start heating them up now.
Step 2:
Place the crushed pork rind crumbs into a bowl, and mix in ¼ cup of grated Parmesan cheese.

Step 3:
In another shallow bowl, combine the beaten eggs, thyme, garlic powder and basil.

Step 4:
In a third bowl, place the almond flour.

Step 5:
Dip the cauliflower florets first in the almond flour, then into the egg mixture and finally into the pork rind crumb mixture. Once they have been coated well, place them aside on a plate.

Step 6:
Using tongs, place 5-6 pieces of coated cauliflower into the heated oil to cook. Turn after a few minutes so that both sides can cook evenly. Remove when the cauliflower bites are golden brown. Be sure not to have your oil temperature too high, or the outside will burn while the inside will remain uncooked.

Step 7:
Remove the cooked bites from the oil, and place on a paper towel lined plate to cool.
Optional
If you are using an air fryer or the oven, cooking times will vary. Cook until the cauliflower bites are golden brown on the outside and tender on the inside.

Easy Keto Cauliflower Bites Recipe
These easy keto cauliflower bites are crispy on the outside, tender on the inside, and full of cheesy, herbed flavor. Made with almond flour, Parmesan, and pork rind crumbs, they’re a low-carb snack or appetizer that's perfect for anyone trying keto for the first time.
Ingredients
- 1 Head of cauliflower cut into florets
- Olive oil and/or coconut oil for frying (optional)
- 1 cup Crushed pork rind crumbs
- ¼ cup Grated Parmesan cheese
- ½ tsp. Thyme
- ½ tsp. Basil
- ½ tsp. Garlic powder
- 2 Beaten eggs
- ½ cup Almond flour
- Salt and pepper to taste
Instructions
- If frying, heat olive oil or coconut oil in a deep skillet or pot over medium-high heat. If baking or using an air fryer, preheat now.
- In one bowl, mix crushed pork rind crumbs with grated Parmesan cheese.
- In a second bowl, whisk eggs with thyme, garlic powder, and basil.
- Place almond flour in a third shallow bowl.
- Dip each cauliflower floret first into the almond flour, then into the egg mixture, and finally into the pork rind and cheese mixture. Set aside on a plate.
- If frying, gently place 5–6 pieces into the hot oil using tongs. Cook until golden brown, turning halfway. Avoid overheating the oil—this can burn the outside and leave the inside undercooked.
- Remove cooked bites and place on a paper towel-lined plate to cool.
- If using an oven or air fryer, cook until the bites are golden on the outside and tender inside. Cooking time may vary by appliance.
Notes
- Use fresh cauliflower for the best texture, but frozen florets work if fully thawed and patted dry.
- Don’t skip the pork rind crumbs—they add crunch and help mimic breading without carbs.
- If baking, place bites on a wire rack over a baking sheet for crispier results.
- For air frying, spray the bites lightly with cooking oil to enhance browning.
- Keep the oil at a steady medium-high heat when frying. Overheating causes fast browning on the outside but undercooked centers.
- Season the egg mixture well—it's the base flavor that carries through each bite.
- These bites are best served fresh, but can be reheated in an air fryer to crisp them back up.
