Common Mistakes
The frosting is one of the simplest components of the Low Carb Frosted Cinnamon rolls recipe. However, it’s easy to go wrong with this recipe. There are two main mistakes that cause the frosting to flop.
Mistake Number One : Not using ingredients that are at room temperature
If you use ingredients that are too cold, they won’t blend well together; thus losing their smooth consistency. If you then end up having to microwave the ingredients, the consistency ends up being saucy.
Mistake Number Two : Using Erythritol that is granular
Unless you’re a fan of frosting that has a grainy texture, opt for powdered Erythritol. If you don’t have powdered Erythritol, you can pulse the granular Erythritol in a grinder and you’re ready
to go!
Step One : Add the mozzarella and cream cheese to a bowl.

Melt them in the microwave on high for about 2 minutes, make sure to combine them well. Leave the mixture aside until you can touch the bowl without burning.
Step Two : After melting the two cheeses, combine the 2 tbl stevia powder, almond flour, egg and baking powder to the bowl.

Stir until the ingredients are mixed evenly and the dough is smooth, which can take 5 minutes or more. This helps the dough cool down a bit as well.

Step Three : Once the mixture has formed into a dough, dump it onto a sheet of parchment paper.

At this point, begin to knead the dough so the ingredients combine fully. Initially, the dough will feel quite sticky; however, as you continue kneading, it will start to come together.
To make the process easier, you can gradually add a small amount of almond flour while kneading, which helps reduce stickiness and makes it easier to roll out.
Step Four : Place a piece of parchment paper over the dough. Using a rolling pin, begin to roll and smooth out the dough.

Continue rolling until the dough reaches ¼ inch thickness and forms a 9 by 16 inch rectangle.

Now, melt the 1/8 stick of butter, adding the 1 ½ tsp of cinnamon and 1 tbl of stevia sweetener in a small bowl.

Stir to combine, then spread the mixture over the rolled out dough using the back of a spoon.

Step Five : Starting along one of the long edges, slowly roll up the dough into a tube.

Use a piece of string or dental floss to cut the dough into 12 to 16 cinnamon rolls (depending on how big you want your cinnamon rolls to be). You can also use a serrated knife, but be careful not to squish the dough as you do or you’ll end up with oval shaped cinnamon rolls rather than round ones.

Before you bake the cinnamon rolls, add a piece of parchment paper to the bottom of the pan and place the rolls in the pan.

Step Six : Set the oven to 350 degrees and bake the cinnamon rolls until golden brown, which may take about 20 minutes. If the rolls are thicker, they would need to be baked a bit longer. Keep baking them until they’re done in the middle and are golden brown.
Step Seven : During the time the cinnamon rolls are baking, start to mix the frosting. In a bowl, add the sweetener, heavy cream and cream cheese.

Mix the ingredients using a mixer on its high speed until the mixture is smooth. You can use a whisk to accomplish the same thing and count it as your workout.

Step Eight : Once the cinnamon rolls are done baking, let them cool down for about 5 to 10 minutes, then you can add the cream cheese frosting to the cinnamon rolls.

The cinnamon rolls are best served warm and as an addition… you can add crushed Pecan nuts to add some extra flavor to the cinnamon rolls! Or, enjoy them as they are!

These soft and gooey rolls are made with keto-friendly ingredients, offering the warm, comforting flavors of classic cinnamon rolls. Perfect for breakfast or dessert, they’re a satisfying way to stay on track.
Ingredients
- 2 cups (about 3 oz.) Mozzarella cheese, grated
- 1 oz. Cream cheese, softened
- 3/4 cup Almond flour
- 1 tsp. Baking powder
- 2 tbsp. Stevia (for the dough)
- 1 Large egg
- 1 tbsp. Stevia (for the sprinkles)
- 1 1/2 tsp. cinnamon
- 1/8 stick of butter, melted
Frosting
- 1 1/2 tbsp. Heavy cream
- 1 oz. Cream cheese, softened
- 1 tbsp. Stevia
- 1/4 tsp. Vanilla extract
Instructions
- In a large mixing bowl, combine the shredded mozzarella cheese and cream cheese. Microwave in short intervals until melted and smooth. Stir well to combine.
- Add the almond flour, baking powder, sweetener, and egg to the melted cheese mixture. Mix thoroughly until a dough forms. It may be sticky—use a spatula or wet your hands if needed.
- Place the dough between two sheets of parchment paper. Roll it out into a rectangle using a rolling pin.
- In a small bowl, mix together the melted butter, brown sugar substitute, and ground cinnamon. Spread this filling evenly over the rolled-out dough.
- Carefully roll the dough into a log, using the parchment paper to help guide it. Slice the log into even rolls.
- Arrange the rolls in a greased baking dish or on a parchment-lined baking sheet.
- Bake until golden brown and firm to the touch. Let them cool slightly before frosting.
- While the rolls are baking, whisk together the cream cheese, butter, vanilla extract, and powdered sweetener until smooth to make the frosting.
- Spread the frosting over the warm rolls and serve immediately.
Notes
- Chill the dough if it's too sticky – If your dough is hard to work with, refrigerate it for 10–15 minutes before rolling it out.
- Use parchment paper – Rolling the dough between two sheets helps prevent sticking and makes cleanup easier.
- Wet your hands – Lightly wetting your hands can help manage sticky dough while shaping or rolling.
- Don’t overbake – Watch for a light golden color. Overbaking can make the rolls dry.
- Let rolls cool slightly before frosting – This prevents the frosting from melting too much and running off.
- Sweetener matters – Use a powdered or finely granulated keto-friendly sweetener for the best texture in both the dough and frosting.
- Store leftovers in the fridge – These rolls keep well refrigerated in an airtight container for up to 5 days. Reheat gently before serving.
